Make honey syrup: stir 2 parts honey into 1 part warm water, then cool.

Shake 2 oz gin, ¾ oz lemon juice and ¾ oz honey syrup hard with ice.

Strain into a chilled coupe. Twist a strip of lemon peel over the top.
