Lightly crush 4–6 dried chilies and 2 cloves of garlic.

Add to a clean jar and pour over 1 cup of raw honey.

Seal, label with the date, and leave somewhere warm for 1–2 weeks, turning daily.

Taste. Strain if you want it clear; leave the chilies in if you want it to keep building.
