What does 'wildflower' actually mean?
It sounds vague. It's actually the most specific label on the shelf.
Wildflower honey is honey from whatever bloomed within a couple of miles of the hive. That sounds like a shrug, but think about what it means: a jar of June wildflower from Vermont is a record of that exact place in that exact month.
The best wildflower producers harvest several times a season and label each pull. Taste a spring jar against a September jar from the same yard and you'll understand why the word matters.
In Puerto Rico, 'wildflower' might mean campeche in winter and coffee blossom in spring. Ask the beekeeper what was blooming. They'll know.
