Peeled garlic under raw honey, left alone for a month. The honey thins and turns savory; the cloves go mellow and syrupy.

Fill a clean jar no more than halfway with peeled garlic cloves.

Cover completely with raw honey, leaving 2 inches of headspace. Label with the date.

Loosen the lid daily and turn the jar so every clove stays coated — it will bubble in the first weeks.

Ready after about a month. Keep at room temperature and use the honey and the cloves.
