How

Half-fill a jar with sprigs of thyme and rosemary, lightly bruised.

Cover with equal parts raw honey and raw cider vinegar; stir well and label the date.

Keep somewhere dark for 4 weeks, shaking every few days.

Strain into a bottle. Take by the spoonful or stir into hot or sparkling water.
