Pumpkin Baked Oatmeal with Honey
Pumpkin and honey bring a soft sweetness to this spoonable oat bake, with pecans for a little crunch. A warm square, a cool spoonful of yogurt, one more thread of honey: breakfast is ready.

Ingredients
- 1 cup plain pumpkin purée — not pumpkin pie filling, which already has sugar and spice stirred in
- ⅓ cup honey
- 2 large eggs
- 1 cup milk of choice
- ¼ cup melted unsalted butter or coconut oil, plus a bit more for the dish
- 2 teaspoons pure vanilla extract
- 2¾ cups gluten-free rolled oats
- ½ cup chopped toasted pecans, plus extra for the top (leave out for nut-free)
- 2 teaspoons pumpkin pie spice
- ¼ teaspoon fine salt
- 1 teaspoon baking powder
To serve (optional)
- A drizzle of honey, for serving
- Vanilla ice cream or Greek yogurt
- A handful more toasted pecans

Get the dish ready
Heat your oven to 375°F and lightly coat the inside of a 9 × 9-inch dish with butter or coconut oil, including the corners.

Make the pumpkin base
In a roomy mixing bowl, whisk the eggs with the pumpkin purée, honey, milk and vanilla. Whisk in the melted butter or coconut oil; let it cool slightly first if it is still hot.

Bring in the oats
In a second bowl, toss the oats with the spice, baking powder and salt so the seasonings are distributed throughout. Stir them into the pumpkin base, then mix in the chopped pecans if you are using them.

Level the mixture
Scrape everything into the prepared dish. Draw a spatula across the surface to spread the oats into an even layer; scatter a few extra pecans over it if you like.

Check the center
Give the oatmeal 30–34 minutes in the oven. The middle should hold its shape rather than ripple when you gently move the dish. Test the center with a toothpick: it should come out without wet batter.

Spoon or slice
Leave the dish on a heat-safe surface for 5 minutes. Divide into 9 servings, or spoon directly into bowls. Finish with any of the optional honey, ice cream, yogurt or pecans.
Storage
Once the oatmeal has cooled, cover and refrigerate it for up to 4 days. Warm only the portion you plan to eat, using the microwave or a low oven.
